This is what participants of Paxxioneer’s learning experience in Laos is enjoying. During the journey there are no Michelin restaurants but mouthwatering snacks at roadside stalls. There are no attractions to check-in but the buzz of outreaching coffee farmers. Paxxioneer的老撾代表Sam Say，曾經是跨國企業的高層，還是個夢想家、建築師、星級家廚。他十年前決定回到老撾，積極推動社區農業發展，建立優質咖啡園，只因一個理由——幫助咖啡農民脫貧，讓他們可以供小孩子（特別是女孩）上學。心度遊歷隊來到老撾，Sam會根據季節和咖啡社企的工作進度，帶大家體驗當地生活，以行動了解他的人生故事。
Paxxioneer’s Laos representation Sam Say — a coffee plant owner, social innovator, ex c-suite executive, dreamer, builder and excellent home cook — is proud to introduce this coffee produced with love. Each bag of coffee is a token of improving the livelihood of Laos coffee farmers, so that they can afford education for their children, especially girls. Sam tailors every Paxxioneer's special learning experience according to season changes and work at the coffee social enterprise. 四月份的老撾是乾旱季節，農務不多，Sam便在這些時候趕緊做社區網絡的工作，聯繫和探訪種植咖啡的農民。為了尋訪優質咖啡種植者，Sam和他的同事們經常走訪老撾偏遠山區，考察咖啡農民種植情況，並與他們商討合理收購價錢，教授農民提升咖啡豆質素的方法。
It's dry season in Laos in April, and the time for Sam to outreach coffee farmers in various hilly areas. Sam and his team often look for local coffee farmers with quality coffee beans, and discuss with them reasonable prices and improvements on coffee plantation. The road trip is an eye opener to rural and agricultural development of Laos, and sets the tone for coffee experiences in the next few days.

Sam創辦和經營的社會企業，近年在當地培育了不少烘焙和製作咖啡人才。今次心度遊歷隊參觀Sam的咖啡夢工作，Sam便特意安排他的得意門生Somphon教大家炒出適合自己口味的咖啡豆。Somphon深入淺出講解炒咖啡豆的竅門，也很有耐心引導每個製作步驟。很快大家都成功親自烘焙屬於自己的傑作，將各有特色的咖啡豆帶回香港。
Running a social enterprise also means training staff in the industry. Sam’s coffee workshop has been training young local people to become professional baristas and really get into the coffee trade.One of Sam’s proudest trainees hold a roasting class for Paxxioneer’s learning experience participants. It’s great fun and enriching to know your own tastes and roast the coffee beans to your favorite flavors.

這次Ada做先頭部隊，去雲南普洱市認識世界著名的咖啡大師Samuel Gurel，「心度」認識他及其一家、咖啡團隊、農民合作夥伴。普洱是世界著名的種茶地區，原來種茶和種咖啡所需的土壤、天氣一樣，因此世界級咖啡大師願意一家七口從美國搬到中國農村，展開種咖啡、製作精品咖啡、培育當地咖啡農及培訓咖啡師的「希望工程」。Samuel是一個咖啡培訓師，也是企業家。他除創辦咖啡培訓學校，為國內咖啡專業人士提供烘培班、沖泡班及咖啡師等許多課程，更慷慨地教人如何經營咖啡生意。

那一邊廂，農戶楊楊給Ada做嚮導，帶Ada去看她家的咖啡田挨著茶田一起生長的美麗圖畫。在當地人家裡吃飯是「心度遊」方程式的重要元素。四個農家婦女，興致勃勃地從一大清早，為來自遠方的朋友準備「過年才吃的飯」！她們忙了一個早上，殺雞、採野菜、切臘肉和割自己種的蔬菜，然後用柴火燒飯，精心為Ada和她的朋友們做了一頓精彩的農家飯。飯後Ada又與年輕的楊楊聊天，聽她如何種茶又種咖啡，並與咖啡大師Samuel合作，提高優質咖啡的質素。

Samuel已答應成為Paxxioneer的雲南代表，在不久將來，大家可以來普洱市與他見面，兼一起探訪咖啡農場、普洱茶農等有趣地方，還有學習品嚐咖啡！

探險家在前線衝鋒陷陣，可靠的後勤支援不可或缺。中國探險學會(CERS) 緬甸考察船HM Explorer 的船員完美示範了如何協助探險家和研究員的工作。

意想不到的是船員個個都是星級大廚！探險船的船員都是受過廚藝特訓的 ---- 黃效文除了是國際知名的探險家，他對食物的要求也相當嚴格，這當然不只是為了口福，而是為了整個探險研究團隊的健康和衛生著想。緬甸各地出產很多新鮮蔬果，這次旅程中我們貫徹 Eat Local的原則，讓船員每餐以最新鮮的當地食材為參加者炮製簡單但豐富可口的菜式。

年三十這天，船員趁大家在下午去探索古寺遺址，在沙灘上即席設起燒烤晚宴——令人驚喜不已的團年飯！

An expedition would not be successful without a supportive crew. The wonderful crew on CERS’s Myanmar research boat HM Explorer gives us a perfect demonstration of such!

Not only are they competent in navigation and research logistics. All crew members of HM Explorer have received special culinary training from Wong How Man -- not that he requires his staff to be master chefs, but eating healthy and happy with whatever's available locally is essential to the hygiene and well-being of a working team in the field.

This journey is truly a sampler of local tastes. We enjoy the simple and hearty meals carefully prepared by the crew with the freshest ingredients from the regions that we are going to explore. Today, on the eve of Chinese New Year, they prepare a hearty barbecue dinner on the beach as participants are off to explore an ancient pagoda. A very impressive surprise indeed!

一班參加了Paxxioneer和中國探險學會(CERS)合辦的「心度遊」，明明可以乘坐專用探險船HM Explorer，卻坐上這些看似破破爛爛的小木艇，搞咩鬼？

伊洛瓦底江岸邊的Si Thal漁村，早年因電魚令河段漁穫大減，亦幾乎令這裡的伊江短吻海豚絕跡。數年前，英國政府資助夏里遜學院和緬甸曼德勒大學在這裡展開生態旅遊項目，幫助Si Thal漁村建造小型博物館，介紹村莊的環境、生活和文化，並讓漁民帶旅客坐上他們日常用的小木艇，划到河中心撒網捕魚，體驗真正的漁家生活。此計劃令漁民既可以保育自然資源，亦能增加收入。

The fishing village of Si Thal by Irrawaddy River was once wreaked by dwindling catch due to electro-fishing. Irrawaddy dolphin disappeared from this section of the river too. A few years ago the Harrison Institute and University of Mandalay launched an eco-tourism project here to help the livelihood of the villagers by protecting their natural resources and keeping their traditional lifestyle. Visitors today can ride on real wooden fishing boats to catch fish in the river with the villagers, and contribute to the sustainable development of the village.

Paxxioneer和中國探險學會(CERS)破天荒合辦的「心度遊」，大本營就在中國探險學會的專用探險船HM Explorer。

HM Explorer全長106呎，2013年在緬甸的造船重鎮Monywa訂製，適合航行於緬甸兩大河流伊洛瓦底江及欽敦江，能靈活深入流域的上中下游，甚至沒有車路可通的地區，展開地理地質、生態環境和人文民族研究。中國探險學會在當地的研究和保育項目，主要有瀕危的伊江短吻海豚，以及兩江流域的漁民、筏民和少數民族。

探險船亦為當地人員提供培訓，讓他們支援各項探險和保育工作。HM Explorer的8名船員，除了打點船上生活細節和機械運作，也十分熟悉伊江環境和沿岸村落。

A group of educators and business executives are “traveling in passion” on Irrawaddy River in a special learning trip organized by Paxxioneer and China Exploration & Research Society (CERS).

HM Explorer, the research boat of CERS which they are making home this week, was built in 2013 in Monywa — the ship-building capital of Myanmar. This special-built exploration vessel can navigate almost all courses of Irrawaddy and Chindwin rivers, Myanmar’s two largest river systems. HM Explorer carries researchers to regions inaccessible by car to study and keep records of the endangered Irrawaddy dolphin, as well as lives of fishermen, rafters and various ethnicities along the rivers.

This research boat is operated by 8 wonderful crew who know literally everything about the rivers and support the work of the researchers.

Paxxioneer和中國探險學會(CERS)破天荒合辦的伊洛瓦底江探索旅程，昨天在緬甸中部的曼德勒展開了。

中國探險學會（CERS）的緬甸科研探險船 HM Explorer，以創會人兼主席、國際知名探險家黃效文（Wong How Man）命名，專門為伊洛瓦底江及欽敦江科研探險建造，方便研究員連同所需物資前往伊江及欽敦江兩岸的村落及沒有車路到達的地理生態熱點。

探險船有6至8名長駐船員，負責駕駛、運作及打理船上生活所需，是次旅程讓參加者切實體驗研究員進行田野工作時的日常生活。HM Explorer設備齊全，有飯廳、起居室、遮陽甲板、露天甲板、圖書館等設施。一行十人來自不同專業領域，傍晚登上中國探險學會的專用探險船，首先與當地的船員熱身一下，了解他們的日常工作和探險船的運作。參加者也要極速適應船上生活，融入別開生面的學習方式。

The exploratory voyage on the legendary Irrawaddy River organized by Paxxioneer and China Exploration & Research Society (CERS) embarks on Mandalay in central Myanmar.

一提起南極和北極，你想到的是什麼？冰雪連天、極端天氣、緲無人煙、遙不可及？

因為工作關係，我多次到訪過南北兩極，寓工作於旅行探險。講真，跟人家說我要去南極或北極公幹，得到的反應不是瞪大雙眼難以至信的表情就是五個「真的嗎？」加八個「幹嗎？」。又講真，儘管大家可能對南北極既嚮往又陌生，但極地並不是遙不可及，多次的南北極闖蕩，也讓自己累積了不少有趣的經歷和心得。不如就跟大家分享一些我經常被問到有關極地旅行的問題吧﹗

南極和北極——其實即是哪裡？

南極和北極是指地球最南和最北的地方。不過，中文詞彙「南極」和「北極」並未很清楚說明相關的地理概念。

去南北極旅行並不是要去地球最南點(南緯九十度)——South Pole或最北點(北緯九十度) ——North Pole。這兩「點」真的要留給最die hard的探險家、科學家和極限運動員。

絕大部份旅人去南極地區(Antarctica)其實是前往南極洲(Antarctic continent)的南極半島(Antarctic Peninsula)和接近南冰洋的島嶼，包括南奧克尼群島(South Orkney Islands) 、南雪特蘭群島(South Shetland Islands)和福克蘭群島。(對啊﹗這曾掀起英國和阿根廷戰爭的南大西洋一嵎，也在好些南極探險船的指定航線上。) 大部份前往南極洲的探險船航線，並不會橫越南極圈(Antarctic Circle)。

而去北極地區(Arctic)旅行，你可選擇前往北極圈(Arctic Circle)內任何一個國家；基本上只要是踏足北極圈內，都已經算是到過北極了。北極圈內包括七個國家最北的地域，即芬蘭北部、瑞典北部、挪威北部及屬地斯瓦爾巴群島、丹麥屬地格陵蘭的大部分地區、俄羅斯西伯利亞北部、美國阿拉斯加北部，以及加拿大育空省、努納武特地區和西北地區的北部。至於近年旅客看雪賞冰、觀看極光的熱門地點，如冰島和加拿大的黃刀鎮，其實都不在北極圈內。

南極和北極長年都是冰天雪地嗎？

南極和北極，都是地球上最寒冷的地方。不過南極比北極冷得多，絕大部份地方長年冰封，又有大風雪，覆蓋南極洲的巨型冰蓋在任何時候都是一片白茫茫﹑冷冰冰的冰上荒漠。

南極洲只有沿岸一兩公里的地方在短暫的夏季溶雪，露出岩石讓幾種(如阿得利企鵝、金圖企鵝和帽帶企鵝)在南極洲繁殖的企鵝在石上築巢。

北極區的冬季從十月到翌年四月，日短夜長而寒冷。但北極區還有四季的風景，在短暫的夏季和初秋，在平原和凍土上，放目繽紛艷麗，有綻紅、淡紫、橘黃的小花，還有澄黃和青綠的葉子，燦爛的自然色彩映照在冰海和冰川邊緣，美不勝收。諷刺的是，我曾有朋友一心想見識北極的冰雪世界，滿以為極地一年四季都是鋪雪結霜，卻在發現初秋的格陵蘭沿岸陽光普照、漫山野花開燦爛，不知是驚喜還是失望。

什麼時候的南極或北極會有極光？

若你對天文有一點點常識，你便會知道這問題是問錯了，就正如問什麼時候星星會出現。其實天空上的星星從早到晚都在，只是日光把星星的光芒蓋過。

極光也是一樣。當太陽的帶電粒子到達地球附近，受磁場線影響集中到南北兩極，再進入大氣層，與大氣中的原子和分子撞擊，激發而產生光芒，便是我們所見的極光。這現象在任何月份任何日子任何時間都可能發生。

當然，要肉眼可以觀賞到極光，便得在高緯度地區的晚上或沒有日光的時候，即是南極和北極的冬季極夜、和春季秋季的晚上。

去南極要坐破冰船嗎？

如果你想去南極旅遊，你可以跟隨任何一艘已在「國際南極旅遊組織行業協會」(IAATO)註冊的探險船。這些探險船絕大部份是北歐國家製造、適合在冰海航行的強化船(Ice-strengthened haul) ，而不是替極地考察船隊衝鋒陷陣的破冰船(Ice-breaker)。

IAATO註冊名單上有三十多艘探險船，通常由阿根廷或智利南部的港口出發，承載人數由十多至大約一百。由於天氣限制，探險船只會在每年十一月至翌年三月前往南極，因此可以前往南極的人數和時間非常有限。

至2012年起，IAATO為進一步減低旅遊業可能對南極洲自然環境帶來的破壞，禁止了使用重型燃油的船隻前往南極地區，變相限制了大型遊船前往南極，而在2012至2013年度的南極旅客人數便因此下跌了25%。

現在一般你在香港旅行社或遊輪公司推廣的南極遊輪航線，其實只在南極半島外圍島嶼經過，亦未必安排登陸活動。如果你想有親身踏足南極區的體驗，近距離觀賞野生動物，你便要仔細閱讀該旅行團的章程，看看乘坐的船隻是否IAATO註冊的探險船及是否能安排在南極區的登岸活動。

去南北極旅行要帶很多衣服和裝備嗎？

視乎行程長短或實際需要，去南北極旅行，最緊要行裝輕便。禦寒防風衣物、保溫帽子、水壺和防曬霜是最基本的裝備，其他東西是否攜帶，悉隨尊便。

去北極地區因為交通和住宿的選擇較多，要帶上什麼彈性比較大。不過，以我的經驗，由於前往極北地區或南美洲最南部城鎮的小型客機，一般只准許乘客攜帶不超過十五公斤的行李重量，因此只帶足夠的行裝就可以了，越輕鬆上路越好。

在極地旅行怎樣上廁所？

要在南北極地區找廁所是天方夜譚﹗試想想，連人影都沒有，怎樣會有洗手間？同時，為了保護極地自然環境，所有旅客都被禁止在南北極地區遺留任何東西，包括排泄物。

因此你會發現，無論你參加了北極地區的穿越雪地活動(Cross country snow-shoeing)，或是南極探險船的登岸活動(landing)，計劃活動或帶領活動的人都會盡量將每節活動限制在三小時左右，每節活動完成後便會到達指定接應地點或返回探險船上，讓大家解決生理需要後再繼續下一節活動。
